Tips

  1. When catering food constantly think sanitation. (Hands, knives, work surfaces, and cutting boards).
  2. Time coordination, ask when they want food served not when people are arriving.
  3. Do not over complicate what you are doing.  Make all the prep work the same but you can make part BBQ and part Dry rub.
