Tips
- Fire management – You need at least 1 hour to build a coal bed and get your fire ready. The smoke should resemble a hazy road on a hot summer day
- Learn how to use your smoker with cheap meat so your mistakes don’t hurt the pocket so much.
- For reverse flow or offset smokers add a water pan for moisture. Also defuse the heat on offsets smokers with a log.
