Either a Brisket disaster or the greatest recovery when all the Briskets are charred. Thanks to Mason Dixon BBQ we got our hands on the Old Country Cabinet-Style Gravity Feed Smoker. The smoker is a unit they leverage for training classes and they provided it to us as a free loaner to review the smoker. There is a lot to like about this smoker.
The first attempt at smoking brisket was nothing short of catastrophic, largely owing to fatigue and a series of misjudgments, alongside a problem with the ThermoWorks Signals Thermometer and temperature controller. Miraculously, our second attempt was flawless everything just worked as expected. We’ll guide you through an experience that nearly ended in disaster and detail our recovery from it. While we encountered numerous challenges, the key takeaway was that the true problem lay in user error rather than any fault with the equipment.
